How it Works

We are so excited you are interested in purchasing beef from us! Let's go through how it works start to finish, what you get, and what its going to cost. 

Begin by purchasing a deposit for a whole, half, or quarter beef.

  • Your deposit reserves your animal.

  • Your deposit will specify the timeframe when your animal will be harvested.

  • Please note that halves and quarters are processed at a specific location (noted on your deposit purchase) whereas you have the option to choose a location for your whole beef. Please contact us if you have any questions or are interested in a different facility than what we are currently offering. We would be happy to make arrangements with you!

When your animal is harvested, you will receive an invoice for the balance due.

  • The balance due is based on the live weight of the animal the day it is harvested, less your deposit. The animal will weigh between 1,100 and 1,400 pounds. 

  • If you purchased a whole beef, you will be responsible for the cost of the entire weight of the animal. If you purchased a half or a quarter, you will be responsible for half or a quarter of the animal's weight.

  • A harvest fee will also be due as part of your final balance, pro-rated based on a whole, half, or quarter purchase

Once harvested and dressed, your animal will be delivered to the processing facility where it will hang for 14+ days to age. During this time, the facility will contact you to complete your cut sheet - a form you will complete specifying how you would like your whole or half processed (half or whole shares only). 

  • Quarter beef shares do not have customization options available. Cuts will be standard. When purchasing a quarter beef, a half beef will be split between two customers. Since the half beef is shared with another customer, not all options will be available in order to please both parties and ensure both get equal shares. For example, only one customer will get a tri-tip and one will get a picanha.

Once your whole, half, or quarter has been cut, wrapped, and frozen your butcher will contact you to pick it up.

What do I get?

Let's breakdown what purchasing a 1,200 lb live steer gets you in terms of actual cut and wrapped meat. 

1,200 lb Beef - Live

Not all of the steer makes it to the table. On average, a steer will weigh only 60% of its live weight after its harvested and dressed. This is due to the animal being bled and removing the hide, head, hooves, and organs, during slaughter. The 60% that remains is known as the hanging weight or carcass weight. 

As the carcass hangs, it loses moisture which accounts for additional weight loss. This along with fat and bone being removed during cutting accounts for an addition 30%-40% weight loss depending on bone-in vs. boneless cuts and if one chooses to keep their offal (liver, heart, tongue, tail, suet). 

In summary, a 1,200 pound steer will yield, on average, 430 pounds of retail cuts (steaks, roasts, ground beef, stew meat, etc.). You will customize your retail cuts using a "Cut Sheet" directly with your butcher. Options of cuts are listed to the right.

As a general rule of thumb, you will need 1 cubic foot of freezer space for every 35 lbs of meat.

*Weights vary due to species, genetics, feed regimen, age, etc.

**Cut options are limited in quarter beef purchasing due to availability (ex: 1 tri-tip per animal).

Ground beef is collected as trim from each primal cut.

How much is it going to cost me?

Pricing is ultimately based on weight. Below breaks down the various costs associated with buying beef in bulk and provides and example of the all-in cost. As always, please reach out with any questions. We would love to hear from you!

Beef Pricing

$3.25 per pound of live weight + harvest fee

  • Beef will usually weight 1,100 - 1,300 lbs at harvest. 

  • Harvest fees: $250+ for whole, $125 for half, $62.50 for quarter

  • Balance, less deposit, is due to DADddie's Beef at time of harvest

Processing Pricing

Processing fees will vary by facility and are paid directly to the processing facility.

Whole beef purchases allow you the processing facility of your choice noting there may be additional harvest and or delivery fees. Please contact us with any questions, processing location options, and or pricing information.
